Tip the Scales Thursday (Linky)

(I know this is a little late in the day, but I had some unexpected errands come up earlier!)
The Battle of the Bulge. Sounds like it should be a sci-fi movie, huh? Mine would be titled, "Fat Wars: Return of the Elastic Pants". Okay, enough joking. I am WAY overweight, or technically, obese, or even further, morbidly obese. I have never really cared. Yes, occasionally I would run out of a store crying because I had to buy the next size up, but I would comfort myself with a milkshake, or chocolate chip cookie. When my husband and I got married, I weighed 9 lbs less than I do now, so, he "bought" me this way. I lost 50 pounds in 2007, gained it all back while pregnant in 2008, and have still not lost it and here we are in 2010. I am miserable. I look, with longing eyes, at the cute clothes in my closet that I was wearing a little over 2 years ago. So, it's time to do something. This blog has already motivated me to do so much in the past 3 weeks, that I figure, why not have a weigh in? That way I have all of you faithful followers to be accountable to. (Also, it's nice to have a cheerleader or two!) I am not following any fancy diet plan, just counting calories, and trying to get in more activity. My Wii Fit has been dormant for much too long. Tonight I shall hula hoop my hips away! :)
When I started my weight loss journey (again) I was at 284.
Today's Weigh-in: 282 (ouch)
That is actually a pound down from last week, so, go me!

Wordless Wednesday - Fun at the Earth Day Celebration...



I am gonna go ahead and put a big FAIL beside this one! I love the idea, but me, wordless? Never. It does however give me more chances to post pics of my guys! *heart*


This is Little Bear at the Earth Day celebration on Saturday. He and I got up early and went out on our own! We visited the farmer's market and bought some greens and fresh baked goodies! Across the street from the farmer's market was a whole bunch of fun stuff! We learned about vermiculture and Little Bear got to transplant a flower which is now outside in our garden. We got to pet a bunny (and a fish!), got our face painted, received lots of great info on recycling and conservation, and of course, got to jump in the jumperoo. It was a great mommy/son day!

Seeds of Faith for the Christian Mom



As most of you know I have not been blogging for very long at all. It took me about a week into it to figure out how to find other blogs (gotta give credit to Friday Follow!). Whenever I saw the title of the Seeds of Faith blog, I knew I had to follow. As a Christian mom I crave interaction with other Christian moms. Sadly, in my real life, there aren't many Christian moms who delight in God the way I do. I was excited to see a blog dedicated to us Christian moms, and I hope to establish new relationships there! Meghan and Sue have done a great job with the setup and idea of this blog. I will soon be joining them in their daily posts about our Almighty God!

Menu Plan Monday

Monday: Spaghetti Squash w/ Homemade Spaghetti Sauce and a salad (I got some beautiful greens from the Farmer's Market on Saturday!! SQUEE!)
Tuesday: Grilled Cheese Sandwiches, Steamed Broccoli and Brussel Sprouts
Wednesday: Tex Mex Crockpot Chicken with brown rice and corn tortillas
Thursday: Pizza Day!
Friday: Hawaiian BBQ Crock Pot Chicken over Brown Rice
Saturday: Brinner (Breakfast for Dinner!) 
Sunday: Pastor's Appreciation Sunday, Dinner after church at a local restaurant


Requested Recipes...
The Hawaiian BBQ Chicken recipe is SO simple! I rarely buy fresh chicken, always frozen... I don't have exact measurements on this as I just kinda made it up one day!

Ingredients: 
Boneless, Skinless Chicken, fresh or frozen
BBQ sauce, whatever kind you prefer
Pineapple (I used canned)
Yellow Mustard
Steamfresh frozen brown rice
I use boneless, skinless chicken breasts, then add some cold water.I then add some barbeque sauce,  a few squirts of mustard, half of a large can of crushed pineapple and some of the juice. Stir it all together. I let all of that cook on high until the chicken is done (2-3 hours) and add more BBQ sauce if needed. Then I add more water and a bag of steamfresh frozen brown rice. I stir all that up and let it cook until the rice is cooked. I serve mine with the rest of the canned pineapple spread over the top! It is absolutely delish!

Bible Verse of the Week - Pursue Peace

I am cheating this week... In weeks past I have written about verses that were near and dear to my heart that day, but this evening, I found a very good piece on peace. (ha, ha!) I have had a rather unpeaceful day today. My 17 month old was very cranky last night, and I had a persistent backache all night long. Needless to say, I didn't get much sleep. To go along with the sleepless night, both of my boys were very rambunctious today. Then there was the usual monthly drama on Facebook. One family member posting something about another family member instead of confronting them about it. Oh boy. Don't you just LOVE social networking? When the drama on Facebook started, I was close to taking my spiritual armor off and putting on my "Oh-no-you-didn't-just-say-that" armor. But I didn't. I tried to be neutral, and helpful, but it wasn't coming across that way, so I stopped it there.  I said a quick prayer, and decided to step out. My favorite part about the featured verse this week is, "Let him turn away from evil and do good; let him seek peace and pursue it". So, my choice to "do good" in this situation, is to say nothing at all. Both parties are now in contact with each other, and hopefully they get everything worked out.

Pursue Peace

"In 1 Peter 3:10-11, Peter provides an important command in our relationships with other people, For "  He who would love life and see good days, let him refrain his tongue from evil, and his lips from speaking deceit.  Let him turn away from evil and do good; let him seek peace and pursue it." 

I want to focus your attention on the last part of verse 11, "Seek peace and pursue it."  This means we are to pursue peace with people. This command is reinforced by the writer of Hebrews in Hebrews 12:14, Pursue peace with all people, and holiness, without which no one will see the Lord. I want you to take note of the first part of that verse,  Pursue peace with….  How many people are we to pursue peace with?  All people.  Does that include your neighbor?  How about your mom?  How about your dad?  How about your kids?  Your boss?  Your relatives?  How about that individual who seems to have a gift for getting on your nerves?  What about those who are rude and obnoxious? We are told that we are to pursue peace with all people. That is not a suggestion.  That is a command.  And that command is clarified further in Romans 14:19, which says, Therefore let us pursue the things which make for peace and the things by which one may edify another. 

Things that edify (or build up) create peace.  Things that tear down shatter peace.  Keep that in mind next time you are having a heated discussion with your husband or wife.  Ask yourself, "Are the things that I am sharing at this moment building up my partner?  Or, are they tearing them down?" Pursue peace with all people by choosing words and deeds that will build them up."  

I am praying for God to help me bite my tongue, especially in family situations, where it can get sticky quick. This blog is titled "Christ-Like Mommy" and Christ was a peacekeeper, so shouldn't I be as well?

There was widespread destruction yesterday as many tornadoes ripped through Mississippi, Louisiana, Arkansas, and Alabama. Please keep all of the families affected in your prayers.

To clip or not to clip...

Coupons. I have never been much of a coupon clipper. When I do clip coupons, I forget I have them. Or the coupons I clip are for products I wouldn't normally buy, so I am still spending money I wouldn't have spent without the coupon. I am planning on buying the Sunday paper tomorrow to check out the coupons. I often receive a handful of coupons from the little printer at the grocery store, but I forget or misplace them too. (Hmm, maybe a little more organization is in my near future!)

I have had the opportunity to sit around and do a fat lot of nothing since my dear hubby did not have to work today, so I have been doing a lot of blog reading. I am amazed at the money saving techniques a lot of you mamas have came up with! We are working towards becoming debt free, and it looks like we will attain our goal within the next year. But I would love to be able to pay more on this debt and if coupon-ing is how it will happen, then I am trying it! Anybody have any tips or suggestions?

Five Question Friday

1. What was the first car you owned?

A white two-door 1993 Chevy Cavalier that was passed down from my dad. Okay not passed down, I had to get a job to buy it from him! I think I paid around $2,000 all together...

2. What song are you embarrassed to know the lyrics to?

Mmm Bop... Remember that one?? The blonde Hansen boys..."In an mmm bop they're gone. In an mmm bop they're not there." lol

3. Have you ever had stitches?

Yes, but only once, in May of 2008. I was pregnant with my second child. I had dropped a glass bowl on the floor and broken it. I threw it in the trash, then forgot about it. I was carrying the trash bag out, barefooted, and the glass poked through the trash bag and cut my big toe open. Ouch. I drove myself to the hospital and ended up getting a tetanus shot. Double Ouch.

4. What was your first job?

I was a cashier at a dinky little department store in my hometown. I worked there for about 2 1/2 years.

5. Who is your favorite Sesame Street character?

I don't have one. But if I had to choose, I would choose the Cookie Monster. Mommy loves cookies. Mmmmm.

Edamame, Eggplant, and Spaghetti Squash...

My grocery day is normally Friday. So, while making out our budget and grocery list today, I noticed we had some extra money (thanks to hubby working some overtime), so I figured I would experiment this week with 3 veggies I have never tried before...


  1. Eggplant - I am not sure I have even seen one of these in real life! I found a few recipes I would like to try, namely, Eggplant Parmigiana.
  2. Spaghetti Squash - My mom says we used to eat this when I was little, but I don't really remember it. I am planning on using it as a substitute for pasta, and finding a low-cal, low-sodium recipe for spaghetti sauce.
  3. Edamame - (is that considered a veggie?) Anyway, I was told this stuff is super high in protein. I am trying to cut back on red meat, (especially after seeing the latest episode of Law and Order: SVU), so I thought instead of subbing another unhealthy meat I would try the veggie approach. I have no recipes, or any clue whatsoever on how to eat this, so suggestions are welcome!

Happy Pineapple Upside-Down Cake Day!

I have never baked a Pineapple Upside-Down Cake. Until Today...

I am using Betty Crocker's Recipe straight from the website.

First, run to the grocery store and buy your ingredients!

1/4
cup butter or margarine
1 cup packed brown sugar
1 can (20 oz) pineapple slices in juice, drained, juice reserved
1 jar (6 oz) maraschino cherries without stems, drained
1 box Betty Crocker® SuperMoist® yellow cake mix

(Vegetable oil and eggs called for on cake mix box)

I am using two 9-inch round cake pans for my cake. Use whatever you have!

First, Pre-heat your oven. Melt your butter in the oven in the pan(s). (Be careful here, I almost burned my butter, left it in a smidgen too long!) Then, take your brown sugar and spread it evenly over the butter. Now, my brown sugar was a little moist so it didn't spread so great. I also did not have a whole cup, so my cake will be a little less brown-sugary...

Next, arrange your pineapples (save your pineapple juice!) and cherries in the most cutesy artistic way you can think of. (I wasn't feeling very cutesy today! lol)

Then mix your batter as directed, except, use the remainder of your pineapple juice and add enough water to make 1 1/4 cups. Use this as the water part of the ingredients. Pour the batter over your butter/brown sugar/pineapple/cherry art.

Betty Crocker says to bake for 40-45 minutes, but I am starting at 25 since I am using the round cake pans. I am going to follow the old "bake until a toothpick comes out clean" rule. My cakes started looking done around 17 minutes, but the toothpick was still batter covered when I poked the very middle. They were finally done around 23 minutes.

(sorry I forgot to take a pic, I was too excited for the next step!)

After baking, run a knife around the outside edge to loosen the cake. Grab a heat proof plate and place it over your pan.( This promises to be fun...I am typing this as they are still baking, I will let you know how it goes!) Turn the pan and plate over so that your plate is now on the bottom. (Success!) Leave the pan over the cake for 5 minutes, so your yummy brown sugar will have time to run all over your cake. Remove the pan, and refrigerate for 30 minutes.

This was the song I heard coming from my 4 year old's room this morning. As I listened to him I had to smile. Many times in the morning I wake up less than joyful. What a thought to have first thing in the morning. Jesus loves me. He really does. When everyone else is less than loving, Jesus loves me.

I love that kid. :)

A'gardening we go!

I spent about 3 hours yesterday digging, pulling weeds and getting dirty. (And just for the record, it took me about 5 minutes longer than usual to get out of bed this morning!)

I started with the small narrow garden directly in front of our apartment. I pulled a gazillion weeds, added 40 lbs of potting soil and repositioned the garden fence.

Then I went to my grandma's house and "stole" (with her permission!) some of her Hens and Chickens. (I don't know what these are really called, if anyone knows, comment and let me know!) I bought this planter at a yard sale about 5 years ago and this is the first time I have ever really used it. Isn't it gorgeous?!

Then I went and bought another 4o lbs of potting soil and started a new flower bed around our tree. I started by laying newspaper around the tree then covered it with potting soil. I will soon place river rocks around the perimeter and fill it with another 20 lbs of potting soil and top it off with a layer of mulch. (Red or Brown Mulch?! I can't decide!)

Now starts the waiting game. Around these parts, the last frost can occur as late as Mid-May. So I will try to contain myself and wait to sew my seeds until at least the first of May. Then I just have to watch the news for any frost warnings.

When do little boys grow up?

Does anyone have the answer? I would like to know so when it happens it doesn't smack me in the face. My oldest son, (my little man!), who is 4 years old went for an interview at the pre-school today. I have a big bag full of mixed emotions over this. I can't wait for him to make friends, learn new stuff, bring home creative little drawings and handwriting exercises so I can put them all over my fridge. But...I also want him to be my little man forever. I want to be able to hold him in my arms and not worry about whether or not he is embarrassed that mom is hugging him. I want to be able to exchange big sloppy kisses with him without him wondering if anybody was watching.

But my little man is excited about going to school, and can't wait to ride the big yellow bus. So I will smile on that first day. For him. But inside my heart will be crying. My baby is going to school.

A little piece of my heart was left at the pre-school today.

Worry

Philippians 4:6-7 (New King James Version)

Be anxious for nothing, but in everything by prayer and supplication, with thanksgiving, let your requests be made known to God; and the peace of God, which surpasses all understanding, will guard your hearts and minds through Christ Jesus.
I worry too much. Most of the time the worry is about things that I cannot change. I worry about things that are far off in the future, I worry about things that are in the past. (Right now, I am worried that nobody will read this post when I really want it to be read!)
Recently, I have been worrying about family members of mine who seem to be back on the path of destruction. The path they follow no longer leads to God, but to their own wants and pleasures.
My awesome husband pointed out to me, a commentary on the scripture from Matthew Chapter 6 from his Dake's Annotated Reference Bible (A commentary KJV Bible by Finnis Drake).
Here is a short excerpt of the commentary:
"Quit worrying, because it is:
  1. Sinful and produces fear
  2. A disease causing other ills
  3. Borrowing trouble that canot be paid back
  4. Brooding over what may not happen
  5. Creating trouble, misery, death
  6. A burden borrowed from tomorrow and others who should carry it
  7. Weight that kills prematurely
  8. Mental and Physical Suicide
  9. A grave-digger that has no sympathy
  10. Needless and wastes time"
and the last one...
"20. Worry is foolish, for whatever is going to happen cannot be stopped by worry;and if it doesn't happen there is nothing to worry about, should adversities actually come, one may still be victorious by trusting in GOD."


So, after reading that (and praying) I have decided not to worry, but pray. I am putting my trust in God, and believing that these family members will realize what they are doing is wrong, and turn back to the path of righteousness.

My greenthumb is itching!

I can't wait to get started on my garden. Today I bought some green onion, tomato, and lettuce seeds . Starting small. I still haven't gotten permission to dig for a garden yet, so I am going to start with container gardening. I will be putting together a tomato starter (in an egg carton!) when I get home from work today! How exciting!

I have the "hankering" to plant a garden... Not a big one, just enough for a few veggies and some pretty flowers. The thought of sweet corn, right off the stalk is making my mouth water! I am hoping that our landlord will let me till a small garden in the grass beside our building. If not, I am sure I can do some container vegetable gardening. Anywho, If I get permission, I am planning on following a garden plot (pointed out to me by a good friend, Alice) from Better Homes & Gardens Magazine.

Canon Printer, How I love thee...

So, my Medical Terminology teacher loves assigning homework. Only the review at the end of the chapter has to be turned in, but let me tell ya, this review is like 12 pages long. So, we were given the option to copy (everything) by hand onto notebook paper to turn in, or make a photocopy of each page. After my last blog post, I suddenly remembered that I had forgotten to stop anywhere to make copies, so I either needed to leave for class early or hitch up the kids, and head out to find a copier. Enter my BRAIN. I had forgotten that my printer was a print/scan/copy combo. Sigh. Homework is copied, and I LOVE this printer... :)

By George, I think I got it...

Okay, I know, I stayed up late last night working on this, but now I am finished (on the layout anyway!) I still have some pages and other cool stuff to add, but duty calls. It's lunchtime and I need to get prepared for class tonight. :) Have an awesome day, and remember, FRUIT!

I stayed up late (way too late!) last night playing with the layout of my blog. Do you like it? It will probably change again soon, so don't get used to it! But now, the kids are awake and ready for some action. Hello Monday!

Girl Enters World of Blogging...

So, this is a blog. I am excited/nervous/scared/lost. You remember in the weird sci-fi movies where the lead character walks into some weird room where everything is white, no doors, or windows, just, blank... That is how I feel right now. I am not sure what to do, or where to go...
